The reason is probably because so far all of the 2.0 builds have been developer snapshots save the one beta. So, all of the information has not been formalized. It is probably assumed, and I think it is okay to assume this, that beta testers and developers are active and know what these details.

For those that don't, these lists exist. Thanks for the idea. The best way to bring it to fruition is to file and issue at openoffice.org.

It doesn't matter. It's entirely your choice. Just accept the default
path that OOo wants to use and you can have 2 or more versions
installed.
