Hi Christel,
Just downloaded the manuals from documentation.openoffice.org/manuals 
and I've notice that on many screenshots OOo has a 
beautiful-colorful-smarty background behind the menu and toolbars.
Mine is a dull gray (in comparison) and the option are not really 
prettier, only a darker gray (I have OOo 1.1.4.)
Any idea where I can get that sunny sky?

The toolbar in the screenshot you copied is gets its looks from the 
desktop theme, not OOo itself. The desktop theme that has this 
sunny-beachy look is if I'm correct the "sandwish" one, whose main 
project page is http://themes.freshmeat.net/projects/sandwish-metacity/

Note however that this is a Metacity theme so it requires to use that 
windows manager to avail of it.
