The answer to your question is no and yes. The trick is knowing the
correct teminology. Selecting a new background color will change the
background for the entire row as you discovered. So, in this, the
answer is no.
However, if you select highlighting instead, it will change the
background color for a letter or group of letters in a row without
changing the background color of the rest of the row. So, in this case
the answer is yes. The purpose of highlighting is to do exactly what
you want.
