Hello.
I have installed open office 2.0 beta using the Suse rpms provided. All
was ok, the menus and every thing installed fine, but the applications
would not load. After investigating I discovered that the file soffice
was not in the opt directory. Have you updated the rpms to include this
file or can you provide the file has I believe it is all that is
missing. Thank you.

This sounds as if you have a corrupted download as soffice is of course in the rpms. You did not mention if it was 1.9.79 or a more recent beta.

After you have unsipped the linux distro, there are RPMs for menus in RedHat, Mandrake, and maybe others I don't recall, that *must* be deleted before you attempt installation under SuSE. I believe these came along after the 1.9.79 snapshot.
