Changing the language as you describe above helps for some settings, but there is also a language setting on characters which actually affect the spelling tool used for that sequence of characters (you can imagine a doc with mixed languages). To change the language of all of the paragraphs in your document do : CTRL + A ( this selects all text ); Format -> Character -> Font and change the language.
