It is a simple x,y line chart.

When selecting the range for your chart, hold down <SHIFT>. That way you can select mutiple non-adjacent lines.

You can also do this by hand. Assuming there are four rows on columns a and c, you select them with $Sheet1.$A$1:$A$4;$Sheet1.$C$1:$C$4

2. I want to not start at 0 on the y axis.

After creating the chart, right-click on it, select Edit.
Right-Click again, select Axis -> Y-Axis. On Scale leaf you can find selection Axis at. Change that to whatever you need.


3. Column a contains dates and I only want the day of the week in my chart.

You have to change the column display format for that.
Select the column, choose Format -> Cells. In Numbers leaf there are lots of different formats. Choose Date, change format code to NNNN. That should do the trick.
