What you want to do, is change the file associations, so that Windows starts OpenOffice for those files. It's easy to do that, by following these directions for each file type (.DOC, .XLS, etc) that you wish to open with OpenOffice.

Changing file associations

Right click on file icon
Select Open With > Choose Program...
Check "Always use the selected program to open this kind of file" and choose the desired application.
