Absolutely, but Subversion will treat the document as a picture [or any other binary file]. IOW, you will retain all prior versions of the document, but won't be able to merge differences between two versions of a document.

ODF files are plain text (xml) files simply zipped up.

The project aims to create a dynamic zip/unzip process as files are checked in/out of subversion thereby enabling full version control of the *contents* of the odf files - not just a blob.
