OK, but why is it that the Open command (right click menu on somebody else computers, not present on mine), opens the document read only in IE ?

You have to do that because the Windows file dialog hides the webdav folder so that OOo can't access it directly. Instead of this it provides them as a kind of local copy in the file system. Perhaps for whatever reason OOo has a problem working with this local copy. MS Office uses an own file dialog also.
