Have you tried
soffice -nologo
On my Windows system, this starts a new Writer document but without
showing the splash screen. You can also use commands such as
soffice -calc -nologo
to start a new Calc document and so on in the same way.
See "parameters;command line" in the help text. But I can't speak for Macs ...
