I have no problem with my printer.  It only retains a setting if asked to do 
so, and then I have to change it in the printer properties.  In fact, if I 
forget to tell it to use landscape and it is in portrait, it recognises this 
fact, and asks me if I would like the printer to correct my lapse of memory.

So on my set-up the answer to the question you actually asked is go into 
printer properties and alter it.  Not much help if your printer doesn't work 
like that.  Fyi, I am running Debian Lenny, CUPS 1.3.8 and a Samsung ML-1510 
printer.  YMMV - in fact, clearly does!
