OpenOffice.org is an office suite, comparable to Microsoft Office. You
can edit some forms, if they are editable. However, if you scan
something, you generally can't edit it, except perhaps with a bitmap
editor. Perhaps if you describe what you're doing a bit better, we can
give more advice.
If the scanned image is set as a watermark you can type over it.
