In my standard linux version of OOo the option is there so it looks like the Ubuntu people have removed it from the version they distribute, probably to ensure that it has "better" integration with the desktop. What I do on the (rare) occasions I want to save to a hidden directory is to enter the name of the directory in the file name box then press enter. Of course if you don't know the name of the directory that's a pain.
