You can separate those signs by various others - including at least hyphens, spaces, and tabs - to indicate the width of the table columns you require. If you interpolate nothing, the plus-sign table will have wider columns just because the column boundaries attempt to imitate the position of your plus signs, which are further apart simply because the plus sign is itself wider than the pipe symbol. If you put one or two spaces or hyphens between each pipe symbol, the resulting table will be similar to the plus-sign version.

Not that I can see.
