Sorry I get it.

Insert+Field+Date, Double Click Date chose Date, on Format side, Choose Additional Format. Hope that this is helpful.

Put the cursor just *in front of* the inserted field and go to right-click | Fields... (or Edit | Fields...). Select the required format there. I don't see any way to get your "th", but "Fri 4 Jan 2010" would be available. (Er, except that 4 January 2010 will be a Monday!)

Before you ask, I don't know of any way that you can set your format for date fields as a default. But if you have a number of instances in one document, you can step between them using the arrow buttons in the Edit Fields dialogue.
