You can search google for 'install openoffice 3 ubuntu' and you will find quite a few howtos. For example like this one: http://www.howtoforge.com/how-to-install-openoffice-3.0.0-on-ubuntu-8.04 The walkthrough is well written so it's easy to follow and there are some valuable points in the comments below.
