You basically specify the data source you want OOo to use for your mail
merge operation. I have used this with a spread sheet. In your case, I
suppose it is going to be your address book from thunderbird.
Once you specify the data source, you just tell OOo to show you the data
source and select the data you want to use from there. Details are there:

I was doing most of that already! (The OO help is very good IMHO).
However, it's not THAT intuitive, and is one reason I /might/ keep using
MS Office.
It seems in OO that it's quite simple to produce a single label, or a
page of labels, but not that simple to produce (say) three labels all
different, which is what I do mostly...
