According to the help, it's available as Ctrl+` (that's a back-quote;
the leftmost key on the number row--on US keyboards anyway).

Information and UI Help > Shortcut Keys for Spreadsheets for a list.
It seems to be available as View > .uno:ToggleFunction under Tools >
Customize, so you should be able to change the shortcut or add it to a
toolbar, if you like.
