Since you say that all chapters are using the same page style, edit the part of the page style that is not giving you what you want. Or, you can type in your document the style you want for Chapter 1. Select it with the mouse. Go to FORMAT > STYLES AND FORMATTING [F11]. Click on Paragraph Styles, Right Click on any paragraph style and choose new. Then, click on the icon on the extreme right: New Style from Selection. Give it a meaningful name. If you need to edit it, right click on your new style and choose "modify."

I have a OOo (3.0.1) document that is already typed out which has several
chapters each separated by a page break and all are on the same page style.
Each chapter has 4 levels of titles;
first, chapter title (for example 2)
second level (2.1 2.2 2.3 ...etc)
third level (2.1.1 2.1.2 ....)
fouth (2.1.1.1 .....)
All numbers appear with the subtitle headings except the first level;
so chapter one heading should be (Chapter One) not (1. Chapter One)
Is it possible to add auto numbering now or should numbering be ideally done
during the actual typing. I would appreciate any guidance on the proper way
to accomplish this. Thank you for your patience and help.

Well if you have typed the numbers and you now select auto-numbering, you will get something like this ' 1.2.3 1.2.3 example '. So you will have to go through and delete your typed numbering. If you type your numbers you get just what you wanted, but if you then edit the document and add say, a new 1.2.3, you must change all the following numbering by hand. If you use auto-numbering the following numbering will be adjusted atomically.
The problem with auto-numbering is getting it to number as you wish. I do not have much experience with OOwrite, but I hate MS word's auto numbering.
You should try the auto-numbering and see if it fits your needs.
