As you have already realised, I'm not very computer literate, (I'm over 70 years old) so I would appreciate your giving me what help you can.
What you need to do is run the Setup program that will be in the folder
you just extracted. The hitch is that Windows defaults to displaying
items in a folder sorted alphabetically, so the setup program is one of
the last files listed in the 1.1.x folder--keep scrolling down and
you'll find it. When you run that you'll end up with the program
installed and the appropriate items added to your Start menu.
There is a very complete manual available for OpenOffice.org, though
it's a bit "hidden" on the website. You'll find the various manuals at:

There is also a version in OpenOffice.org's own text file format, but I
figure the PDF version might be a better initial choice until you get
comfortable using the program itself <grin>. That does require the use
of a PDF reader, the most well known on Windows being the freely
available Adobe Acrobat reader--it's very likely it is already installed
on your computer, but if you run into trouble reading that file you can
get the reader from Adobe's website (http://www.adobe.com).
