You are doing two separate things which will require two separate sets
of steps to accomplish.
I'm doing this on OOo 3.0.1 on a Mac, by the way. Shouldn't be much
different on another system, if at all.
REMOVE FOOTER FROM FIRST PAGE:
1) Make sure the cursor is somewhere on the first page.
2) Click "Format", then click "Styles and Formatting" (or press F11).
3) In the "Styles and Formatting" box, click the "Page Styles" button
(fourth from the left, at the top of the windows).
4) In the list of styles, select First Page. I applied it by
double-clicking it.
5) Close the "Styles and Formatting" box.
YOUR CUSTOMIZED FOOTER:
1) Click "Insert", click "Footer", click "Default".
2) Go to page 2 or 3 of your document and click in the footer to place
the cursor there.
3) Type an asterisk (*)
4) Click "Insert" then "Fields", then "Other..."
5) Click "Document" if it is not already selected.
6) Click "Page" in the "Type" column.
7) Click "Previous Page" in the "Select" column.
8) Click the "Insert" button.
9) Click the "Close" button.
10) Type " Page of ".
11) Click "Insert".
12) Click "Fields".
13) Click "Page Count".
14) Type another asterisk (*).
That should give you the format you asked for on the final 2 pages, with
no footer showing on the first page.
