Ctrl/I (un)sets selected text Italic. You can see/change these key
assignments:

   - Go to View>Toolbars>Customise
   - Select the Keyboard tab
   - Select Format in the Category pane
   - Select Italic in the Function pane.
   - If the selected function has a currently assigned keyboard shortcut, it
will be displayed in the Keys pane.
   - If no keyboard shortcut is currently assigned you can assign one by
selecting a key from the list in the top pane labelled "Shortcut keys" and
then clicking "Modify" to the right of that pane. This same method can be
used to change an existing key assignment.
   - The radio buttons to the right of the Shortcut keys pane let you choose
whether your new key assignment should apply only to Calc (or whichever
module you are running) or to all the modules in OOo.

I can't find a way to increase/decrease the font size other than by
explicitly selecting a new size from the Font Size list box. It's probably
not hard for someone with the appropriate skills to write a macro for this
which could then be assigned to a shortcut key.
