I'm not sure if I understand your problem, but it sounds as if you may have hit the key labeled "Ins" (or Insert, maybe), which toggles the behavior when editing between inserting newly typed characters within the existing text, or overwriting that text. If so, hitting that key again should get you back into Insert mode. In any case, though, the Undo icon (or Edit > Undo, or Ctrl-x) should remove any changes you accidentally made. Did this not happen, or do you just mean that when you typed in new text again, it still did the overwrite?
