I use Thunderbird for email and Palm Desktop, which is available for free and runs standalone, for calendar and the other functions it provides. I do use a Palm PDA, too, but it isn't a prerequisite. Palm Desktop already interfaces with Outlook, so it is probable that some clever soul is already working on a linkup with OOo.

There is also the Sunbird (calendar) project at Mozilla, but I don't know how active it is. http://www.mozilla.org/projects/calendar/sunbird.html
