You can edit your toolbar to remove any button you don't like.
and an ever-growing stylist window (which is starting to become
unmanageable)?
You can use the drop down box on the bottom of the Styles and Formatting
List to only show a limited # of styles. I usually use either Custom (to
show mine) or applied (to show all of the applied styles in the document).
