That's strange. I have Ubuntu 8.10 and OpenOffice.org Calc 3.1 (vanilla version - not the Ubuntu version) and the default format seems to be YY-MM-DD, which indeed is the Swedish default format. Which OpenOffice.org language pack is installed on your system?
