OK, a little poking around led me to this --
Assuming you know that only one page will precede whatever you want to
start on the second page, instead of inserting a "Page Count" field, use
an "Insert Formula" field (on the "Variables" tab). The formula you
want is "PAGE - 1". "PAGE" is the page count statistical variable for
the document. You can get more detail by looking for "statistics" on
the "Find" tab of help, then looking at the "Formula" entry in the list
produced.
So --
You'll have a page style change from the first page to the second page.
In the first paragraph on the second page you need to specify, on the
text flow tab, that the page number is 0. If it's 1 that page will be a
recto (right) page. That's what's happening in your sample file, as
you've seen.
In the properties of the default page style, the header will be on. All
the fields you need are on the variable tab after Insert|Field|Other.
In the header will be, first a field "Set Page Variable" with a
selection of "on" and no offset. Then will be a field "Show Page
Variable", then a field "Insert Formula" with that formula "PAGE - 1".
You'll add whatever text you want before those fields.
To get the PAGE - 1 result to display properly you will probably have to
press the F9 (recalculate) function key.
It all seems a little awkward, but it ought to work.
