Every document has its own setting for language. My copy of OO.o is set
to use Canadian English for spell checking but I often receive documents
written in US English.
The menu at the bottom of the OO.o window has a box that indicates the
language used for that document. To change to a different language for
spellchecking, highlight all the text in the document, then right click
on that box indicating the language of the document and select the
language you want.
