The word count is correctly updated when I hit F9 (useful if I have inserted the Wordcount field somewhere in my document) or when I do Tools>Wordcount. This is true regardless of whether Edit>Changes>Show is on or off. The word count does *not* include deleted text. If I reject a deletion then the words in that undeleted text are counted again by the word count. So it seems to me that any problem must be specific to the Ubuntu version of OOo - are you using that or the non-Ubuntu version? What happens if you install the one you don't currently use?
