One thing to bear in mind is this is a users list, not developers. Also,
given this was caused by a change of server, perhaps the problem is with

It was working saving large documents from my machine fine till file
server change, the new FILE server is working fine with other computers
on the network (older OOo versions). Other large shared files are not a
problem, tried saving same file in word, no problem, so blaming ms is
possibly not the way to go? you will note from my email address I am a
long standing anti ms man, but this is something to do with the way OOo
works I believe, and I recall, as stated previously, having this problem
and resolving it years ago, but also recall other available settings in
OOo to do this.
May I suggest you run a network traffic monitor, and see for sure where
the delays are being caused? If all was well until the file server
changed, and if others aren't having the same problem with OOo, it does
rather point to the server. But looking rather than theorizing is often
a good idea :-)
