I see multiple .deb files in the /DEBS folder, but I kind of expect
a master install file of some sort.
Looking at
http://download.openoffice.org/common/instructions.html#other_linux
I see nothing helpful about installing debian-style packages.
Again Grrr!
Well, I've gone from bad to worse. Now I have no OO at all and maybe
some kind person can enlighten me where to go from here.

In a terminal cd to the directory that has the debs files. Execute sudo
dpkg -i *.deb , then cd to the desktop-integration folder and execute
the sudo command.
The installation steps for Ubuntu are documented here:
http://wiki.services.openoffice.org/wiki/Documentation/Administration_Guide/Linux#DEB_Based_Linux_Distributions
here:
http://wiki.services.openoffice.org/wiki/Documentation/How_Tos/Installing_on_Debian_based_Distros
and on page 21 of the Installation Guide PDF which you can get from here
http://wiki.services.openoffice.org/w/images/7/7e/Installation_Guide_OOo3.pdf
(it's linked from several places in the Documentation).
When you download the OOo tar.gz file direct from openoffice.org (ie
don't go get the DEB tar.gz, just use the default download for Linux)
and unzip it, you should see something like this...
drwxrwxr-x 5 user group 4096 2011-01-17 20:09 installdata
-rw-rw-r-- 1 user group 431542 2011-01-17 20:09 JavaSetup.jar
drwxrwxr-x 2 user group 4096 2011-01-17 20:09 licenses
drwxrwxr-x 2 user group 4096 2011-01-17 20:09 readmes
drwxrwxr-x 4 user group 4096 2011-01-17 20:09 RPMS
-rwxrwxr-x 1 user group 14627 2011-01-17 20:09 setup
-rwxrwxr-x 1 user group 3925 2011-01-17 20:09 update
You can run the setup file with sudo sh ./setup (assuming you've got
Java installed) and it'll sort out what's needed for installing in
Ubuntu - I just tested it last week on Ubuntu 10.10 x84_64 and it worked
fine.
