I had not seen the behavior you originally described until I forced OOo
to do the conversion(s). The default settings on my installation, which
is rather plain vanilla, don't cause the automatic conversions. In
other words, "text" is the default style for table cells which provides
the behavior you want and which is how OOo apparently ships. This
forces me to conclude that you tweaked a setting that is causing the
confounding behavior(s).
As for history, I was there, too. Ain't that big a deal unless that's
where you want to live. I don't. Of course, to be or not to be
curmudgeonly is as much a matter of choice as selecting an office suite.
Choosing wisely can be its own reward.
