Hi Tom,
 What version of OpenOffice.org are you using ?
There are tools to convert Access files into more standard files for import, 
they are not integrated yet with OOo but you can get them at 
http://mdbtools.sf.net.

Also there are many documents available at http://documentation.openoffice.org 
and http://dba.openoffice.org
