It sounds like you have a file association problem. Uninstalling OO
may not help. And maybe you are using some kind of windows? A little
more info would help the nice folks who help users on this forum help
you.

Removing OO from your task bar doesn't do anything but remove it from
your task bar. It doesn't change the computer's automatic recognition
of file type and program association.

To change this (on almost all versions of Windows), 
   find a file with the type that opens with OO instead of moodle (My
Computer or explorer),
   "shift-control right click" the file, which should bring up an
action box with open-with as a choice, and follow through changing the
file association to moodle

If you still want to uninstall openoffice and the control panel's
add/remove dialog doesn't work for you, download and try the program
at http://support.microsoft.com/kb/290301/en
