Well, there are several possibilities, but try first to go on the "Format" menu, item "Page", and there, in the Header and Footer tabs click on Header On and Footer On. You can also go on the "Insert" menu and check the header and footer... I am using OpenOffice for business letters with all kind of fancy formats for some years already, I think...
