I think that this project in particular probably delays "release"
versions long past when many commercial vendors would call a product
stable, I think the biggest issue you would face with rolling out
even a very solid beta version would be the user response every-time
something didn't work.
Take a look at http://qa.openoffice.org/ it is pretty amazing how
much effort the community is putting into this project, and how few
(and esoteric) the bugs are.

I have found 1.9.125 very stable. I leave it to others to advise
as to whether one should use the Beta 2 for production.
