Ugg! I've always hated that message. People always will ask "What will
happen to my documents" if I uninstall?

Considering what some software packages do, it is a very good
question. When OOo is uninstalled, the user folder is left intact. If
my memory is accurate, even the local settings are left.
I have unstalled OOo packages without affecting anything except for
the program files.
