Quit reading directions for the OS challenged:) -- Take a look in your applications folder, find the Open office folder, then find the Seagull icon and drag it to the dock if you are going to use it regularly.

Better yet, goto www.neooffice.org and download the "Macintoshed" version of Open Office -- it's a much easier install, works like a Mac application rather than running in an X Window.
