You should not have deleted the folders containing OOo 2.0. That
left the Registry keys for OOo in place. That could cause some problems
at some point if you can not get someone to remove all references to
OOo in the registry.
Your problem is not OOo 2.0. It is file associations. I would
suggest you search Help in Windows for this phase: file associations.
It should describe how to change them. What you want to do is to follow
the steps Windows gives you for each MS format you use. (*.doc, *.xls,
pps, etc.)
