If you want to change the language to Spanish on a global basis, do the  
following:
 
Tools > Options > Language Settings > Language     then under Default 
Language for Documents, select the language you want.
 
If you want to change the language by paragraph or by document, select the  
text you want to apply the change to. Then: Right click; select Edit Paragraph  
Style...  Click the Font tab. Then select the language you want to use for  
the applied text.
