Ok, good info supplied and I would suggest that it is nothing to do with what your running (application & hardware). Ram and app's you've mentioned should no way cause OOo to crash every time after a few minutes.
I can only suggest one thing - extract your setup files, then re-run the setup file and select 'repair' option. I'm guessing that something has happened to your specific install of OOo which is causing this. The repair should clean that up.
