I have installed OOo 2.0 along with openoffice.org-redhat-menus-2.0.0-3.noarch.rpm on both Fedora Core 3 & 4.

No problem on FC3 (gnome 2.8.0) but the icons dont show up in the menu on FC4 (gnome 2.10.0), although they are actually installed (just like in FC3) in /usr/share/icons/...

It looks like there is some sort of "gnome icon database" that has to be rebuilt and the postinstall script of openoffice.org-redhat-menus doesn't take care of it (and I did not find yet how it should be done).

Yep, it's called
gtk-update-icon-cache

per the freedesktop.org icon spec:
http://standards.freedesktop.org/icon-theme-spec/icon-theme-spec-latest.html
(See section labeled "Implementation Notes" in regards to caching)
