Another file in the \share\dict\ooo folder is dictionary.lst. Open this
file in Notepad. The top contains an explanation of the file's
contents, including which part of each entry is the language code, the
country code, etc. At the bottom you'll see lines like:
DICT en GB en_GB
HYPH en GB hyph_en_GB
...
DICT sw TZ sw_TZ
...etc.
Delete the entire line for any entry you want to see removed from the
dropdown lists. You may also remove the actual dictionary and
hyphenation dictionary files for those languages if you so desire, but
either way, they won't show up in the dropdown if they are not in
dictionary.lst.
