When I select some text in an Impress slide, I can do two things to change the colour: 1) Click on the little arrow next to the Font Color icon on the formatting toolbar. This displays a palette of colours from which you can choose. 2) Right-click on the selected text and choose Character. This open the Character dialog where you can change the colour on the Font Effects tab. If these techniques do not work for you, we'll need to try to find out what else is going on. To change the colour of all the text of a particular paragraph type (say, the headings on all the slides, or the text of second-level bullets, it would be better to change the style for that paragraph type.
