All that is going to happen is that the associations currently existing 
between your files and OpenOffice.org, will cease to exist.  I don't know if 
MS Windows will reassert the original association between MS Word and Excel, 
but the files will be unharmed.

P.S.  If you wanted to get rid of the associations between OO.org and the MS 
Word and MS Excel, you would need to go into the registry and tackle it 
there.  I could give you details except I'm not currently on my MS Windows PC 
at the moment, and I don't remember the exact locations of the association 
keys.  Sorry about that. :-)
