The icon picture has nothing to do with the actual content of the file.
It is only the file association that your computer uses to open the
file. 

If you wish others to view/use your files on MS Office, then you must
save the files in a version that Office will understand. (XLS, DOC, MDB,
PPT and others)  Your icons may still show up as Open Office icons but
if they have those formats recognised my MSO, then others will be able
to see/open/use the files when they are emailed tp a person/pcomputer
without OpenOffice.

You have the option when saving a file in OpenOffice to change it to a
different format than the default by use of(saveAS).  That is where you
can choose to allow those not using OpenOffice to use/view your files in
MSO format.
