Congratulations, on being able to afford switching to the new Intel Macs. Regarding your complaint. You either download X11 from Apple's website or re-install it from the Custom options available from your System Disk; then re-run Open Office.
OR go to http://www.neooffice.org/ and download something called NeoOffice which is essentially Open Office which doesn't need X11 to run within OS X. When I was in OS X, I switched to NeoOffice and it worked nicely. Best wishes ...
