The one area that I know of where there is 'hidden' data is when you
record changes (Edit - Changes - Record Changes). If the option (Edit -
Changes - Show) is unticked then you won't see the old changed text, but
it is there.

I believe that the old text is removed when you accept or reject the
changes (Edit - Changes - Accept or Reject). So, before you send the
document off you should do this at least.

It may make a good request for enhancement to have OOo warn when saving
(and certainly when emailing via "Document as Email") if there are
changes still recorded, and maybe only when Show is off to avoid
annoying users too much.
