The portable version of OpenOffice works great. There is an older version available for smaller USB drives also. I ran it successfully on a 128MG drive before my 1G drive I use now.
The Java does not always work as it is not portable but it is possible to allow the installed version of Java to work with the portable applications if you read the support documents and follow the instructions. I don't know if there is a U3 version of OpenOffice.org. However, there is a version called Portable OpenOffice.org, at a site called (I think) PortableApps.com. I haven't tested it yet myself, but I believe this version is meant to run on *any* USB key with enough storage space, not just a U3-enabled one. If I got anything wrong here, feel free to correct me; I'm not 100% positive about my knowledge in this area.
