There is an option when you install Open Office to have it open Microsoft documents by default. If you check the boxes Excel, Word and Powerpoint files open in OOo.

Windows does funky stuff sometimes. For whatever reason it defaulted back to Office opening those files if you double click. I think you can go to Tools - Options and change the setting.
